Why Most Importers Miscalculate Bakery Line Capacity

Most investors open with "how much does a bread production line cost?" when the correct question is "how many pieces per hour do I need, and at what unit weight?" Capacity in a bakery line is not set by the mixer or the oven in isolation — it is set by the slowest station in the chain. Any automatic bakery line imported from China is a sequence: spiral mixer, dough divider, rounder, intermediate proofer, moulder, final proofer, oven, cooling tunnel, then slicing and packaging. If the oven can handle 3,000 pieces per hour but the divider only delivers 2,000, your real output is 2,000 — and you paid for an oven that runs half idle.

The Practical Formula for Oven Output

To size a tunnel oven, use: output (pieces/hour) = (belt area in m² ÷ area occupied by one piece including spacing) × (60 ÷ bake time in minutes).

Worked example: a tunnel oven with a 1.2 m wide belt and a 12 m baking zone gives 14.4 m² of belt area. A 90 g Arabic flatbread occupies roughly 0.045 m² including spacing, so the oven holds about 320 pieces at any moment. At a 2-minute bake time, theoretical capacity is 320 × 30 = 9,600 pieces/hour. Multiply by a realistic efficiency factor of 0.80 to 0.88 and you land near 8,000 pieces/hour — the figure you should actually write into the contract.

Note how decisively bake time varies by product: Arabic flatbread 1.5 to 2 minutes, burger buns and rolls 8 to 12 minutes, pan toast bread 22 to 28 minutes. The same oven can differ by more than tenfold in output depending on the product, which is why any quotation that does not name the target product and its unit weight is meaningless.

Balancing the Line: The 15% Rule

Do not buy stations with identical rated capacity. Sound engineering practice is to specify every station upstream of the oven at roughly 10 to 15 percent above oven capacity, because the oven is the most expensive asset and the hardest to stop — it must never be starved of dough. Equally, size the downstream stations (cooling, slicing, packaging) with the same margin, because bread leaving the oven cannot be paused or buffered without losing quality.

The golden rule: the oven sets the rhythm of the entire line. Select the oven first based on product, unit weight and required output, then build every other station around it with a 15 percent margin before and after.

Energy and Fuel Consumption

Chinese tunnel ovens typically run on diesel, natural gas, LPG or electricity. Calculate cost per unit produced, not just the oven price: a 12 m tunnel oven burns roughly 18 to 30 kg of gas per hour depending on temperature and insulation. Ask the supplier for the thickness and grade of the rock-wool insulation — a 50 mm difference can mean thousands of dollars a year on the fuel bill. Request the full electrical load diagram in kW per station so you can size your transformer and backup generator correctly.

Space, Ceiling Height and Room Conditioning

A complete bakery line rated at 8,000 pieces/hour needs a hall of at least 400 m² with a minimum clear height of 4.5 m, plus proofing rooms that hold 32 to 38 °C and 75 to 85 percent relative humidity. Add a separate flour storage area and a generous cooling zone, because hot bread spoils inside its bag if it is wrapped before the core temperature drops below 35 °C.

Common Mistakes When Importing a Bakery Line from China

  • Contracting on "maximum theoretical capacity" without fixing product type and unit weight in the contract.
  • Skipping the cooling tunnel, which leads to mould inside the packaging within two days.
  • Buying a divider that does not suit your recipe's hydration, so piece weights drift beyond the allowed tolerance.
  • Overlooking food-contact parts and failing to specify 304 stainless steel on every dough-contact surface.
  • Not requesting CE marking and food-safety conformity reports, which later stalls customs clearance and health licensing.
  • Accepting non-standard pans and belts that cannot be sourced locally a year or two later.

What to Demand Explicitly in the Quotation

  • Output in pieces/hour and kg/hour for a named product at a named unit weight.
  • Oven belt dimensions, belt material and recommended bake time per product.
  • Total electrical load in kW and hourly fuel consumption.
  • A hall layout drawing showing footprint, height and service access routes.
  • A wear-parts list covering one full year of operation.
  • Factory acceptance test terms, including a trial run using a sample of your own flour.
